Berries Coconut & Summer chocolate cake

INGREDIENTS

Coconut Berries cake

Ingredients

  1. 4 large eggs
  2. 1 cup of coconut sugar
  3. 6 table spoons of coconut oil melted
  4. 1 cup of whole wheat flour or White flour
  5. 1/2 cup oatmeal flour
  6. 1/4 cup of coconut flour
  7. 1 1/2 cup of almond or oatmeal milk
  8. 1 tablespoon of baking powder
  9. 8 fresh blackberries and about 20 fresh raspberries to make the middle filling.One coffee spoon of minced ginger and 1/2 cup of shredded dried coconut

 

 Summer Chocolate Cake

Ingredients

  1. 4 eggs
  2. 285 grams of Guee
  3. 1 cup of coconut sugar
  4. 1 cup of milk
  5. 1 1/2 cup of white flour
  6. 1 cup or organic chocolate
  7. 1/2 cup of Nesquik
  8. 1 tablespoon of baking powder

METHOD

Preparation of Berries Coconut Cake

 

1-Round cake tin and 12 muffins

2-Warm up oven only on bottom part at 180 celsius

3-Separate the egg yolk from the white in 2 different bowls.

4- Whisk the egg whites until stiffened and keep it apart.

5-Mix the egg yolks with the coconut oil and sugar really well,  about 5 minutes. This is very important so your cake doesn’t create a sugar crust on top.

6-Next add the different flours one at a time, the milk, little by little and always mixing.

7-The 8 fresh blackberries , the minced ginger and the coconut.

8-Dissolve the baking powder in a little bit of milk at room temperature to make sure your yeast is working well. Next add it to the cake dough.

9-Last add with a wood spoon the egg whites that are stiffened to the cake and mix it gently with the spoon. Some bubbles might appear which means that the dough has some air on it. This is good!

10-Prepare a cake tin with butter and sprinkled flour so the dough won’t stick to the bottom. Fill it up to the middle and place it in the oven for about 40 to 45 minutes.

 

Preparation of Summer chocolate cake

 

1-Serves one round cake and another 12 muffins.

2-Warm up oven only on bottom part at 180 celsius.

3-Separate the egg yolk and egg white. First beat the egg whites until stiffened and set it apart.

4-Next beat well the egg yolk, the sugar and the butter. This mixture needs to be really well mixed together so your cake bakes evenly and does not create a sugar crust on top.

5-Add one cup of milk and beat it.

6-After add the flour and chocolate powder.

7-Dissolve the baking powder into a little bit of milk at natural temperature to test if the baking powder works. The baking powder is good when the mix grows a bit.

8-Put this mix in the dough and keep beating it all together.

9- The last ingredient to be mixed is the stiffened egg whites and at this point only uses a wooden or silicon spoon to incorporate the egg whites into the dough.

10-Prepare a cake tin with butter and sprinkled flour so the dough won’t stick to the bottom. Fill it up to the middle and place it in the oven for about 40 to 45 minutes.

 

Middle filling of raspberry

Preparation:

Cook a jam of about 20 fresh raspberries with a shot of rum and 2 tablespoons of organic coconut sugar.

Once both cakes are ready let them cool. Put the chocolate cake on the bottom and wet it with a little bit of chocolate milk.  Put the raspberry filling in the middle. Place the coconut blackberry cake on top and wet it a little with some coconut milk and Rum (optional de Rum, it depends if it is for adults or children).

Cover the cake with a dark chocolate sauce
Preparation:
2 and a half cups of nesquik, one desert spoon of butter,  between 1/2 and 1/4 cup of milk, a pinch of salt and vanilla powder or liquid. The milk amount is until you see the mix liquid but still dark brown.

SERVING SUGGESTION

 

Decoration of the cake and serving suggestions

Decorate the cake with fresh blackberries, raspberries and strawberries. The quantity on top of the cake is up to you. I put usually 5 of each and I cut some strawberries in the middle.
