Live Zucchini Noodles with Vegan Parmesan
Zucchini is another fruit that is cooked as a vegetable! Very low in calories! Excelent to support weight loss with added nutrition benefits like: Vitamin C, A, Folate, Potassium, Fiber, protein and low net carbs! You can eat all parts of it and enjoy its subtle fleshy taste. It promotes eye health and prevents diseases related to a deficit of Vitamin C, such as scurvy that you feel tired, week and with sore arms and legs.
Ingredients for Live Zucchini Noodles
3 Big organic zucchnis and a peeler
One handful of salted and toasted cashew nuts
Ingredients for Thai Sauce
2 table spoons of sesame seed oil
1 fresh small piece of fresh ginger like the top of your thumb
1 red onion
2 peeled garlic gloves
1 desert spoon of Himalayan pink salt
2 table spoons of fresh Tumeric grinded root
Half a cup of coconut milk
Grind the pieces of the centes of the zuchini and mix it
Fresh lemon grass leaves or sauce
Peel the Zucchinis and reserve the outside part for decorations
Start peeling the white part form the outside to the inside and do it in long strands. Stop once you start seeing the seeds.
Reserve the center part with the seeds for the Thai Sauce
As for your vegan parmesan cheese just grind a handfull of salted toasted cashew nuts
Preparation Method for Thai Sauce:
Stir fry all the ingredients in the order above. Taste it as you cook it for about 10 minutes in order to decide if you want it more spicy, and if so, add more fresh ginger
Make green roses with the outside green peel of the zucchini to decorate your plate or simply buy some edible flowers and decorate it. Place the live zucchini noodles in a colorful plate and the Thai sauce on top. You can serve it vegan or you can add some thai organic chicken on the side.
